Belizean cuisine is a blend of several cultures and fresh, hot and spicy.  My favourites are fresh fish and seafood, grilled and especially if eaten at the beach, ceviche as appetizer and Johnny cakes in order to add some extra pounds.  Hard to avoid:  rice and beans.
